Pouteria campechiana, commonly known as Egg Fruit or Canistel is a member of the Sapodilla family.  Canistel is native to southern Mexico, Central America and Panama, though it is grown in many tropical and subtropical regions around the world by those who know about this delicious fruit.

The fruit is about 3-5" long and about 2-3" wide and varies in shape with some round, some oval, and some oblong.  The young fruit is green with a thick, waxy skin that changes to varying shades of yellow as it ripens.  The pulp of the ripe fruit is soft, smooth and yellow to golden in color.  Canistel is eaten raw, blended in drinks or cooked as a vegetable.  The fruit gets the name Egg Fruit because its texture and color are similar to that of the yolk of a hard-boiled egg, although it is immensely sweet and is nothing at all like egg. Some compare it to a yam, with its sweet, rich flavor.

Canistel, like Chocolate Pudding Fruit, is incredibly versatile and can be used in a variety of baking and cooking applications. The raw fruit alone is a delight, and is incomparable to virtually any other fruit. The texture is dry, yet the fruit is soft and remarkably sweet, perhaps even sweeter than sugar itself when fully ripe.

The Canistel usually has 1-4 seeds or pits that are oblong or oval in shape, glossy on one side and pointed at both ends.  The skin of the fruit is not generally eaten, and the seeds are inedible and should be discarded.

Our Egg Fruit is grown and picked right here in Miami, where it produces abundantly. Our Egg Fruit is 100% organically grown.

Uniquely, this fruit is full of niacin, vitamins A and C, calcium and phosphorus. This makes Egg Fruit an excellent source of natural, sustained energy.

Allow your Canistel, or Egg Fruit, to ripen at room temperature for several days or until soft. As the fruit ripens it will change from a green skin to shades of yellow, orange and gold.  When ripe, the skin should indent all around the fruit when pressed gently. This fruit is only ripe once it is very soft, if it isn’t soft, allow it to continue to ripen.

Ripe Egg Fruit should be consumed or used promptly, and uneaten ripe fruit should be placed in the refrigerator where it will keep up to a few days.  The ripened fruit can also be frozen for later use in blends and cooking. Many people mash the fruit and add a bit of sugar, then store it in the freezer in an airtight container.  This should hold for up to 6 months. This is a delicious and versatile fruit you don’t want to miss out on!
