Ice Cream Bean Box (Pre-Order)
Inga edulis, commonly known as Ice Cream Bean is native to the Amazon rainforest and throughout Central America. When the powder puff-like flowers of the Ice Cream Bean tree are pollinated, they produce long green curvy pods, roughly a foot in length. However, don’t let the appearance of this odd fruit fool you, Ice Cream Beans conceal a delicious secret. Each pod contains a dozen or more beans or seeds, and each bean is encapsulated by a wonderful, sweet, cotton candy-like pulp that has a taste very similar to that of vanilla ice cream, with hints of watermelon.
Fortunately, this delicious fruit is also exceptionally healthy, as it contains an abundance of phytonutrients like Epicatechin, which is also in dark chocolate. The fruit contains antioxidants and anti-inflammatory flavonoids, as well as vitamin A, C and vitamin B1 and B2.
The beans themselves, however, unlike the cotton-candy like fruit, should never be eaten RAW. But, once the seeds are roasted or boiled, they are edible and tasty and rich in protein. In fact, this nutritious snack is quite common throughout many parts of Central America, and South America. The beans are boiled and salted for a delicious quick meal, or cooked as an ingredient for various dishes. Throughout the Amazon there are dozens of Ice Cream Bean varieties; however, we grow several varieties here in south Florida which we consider to have the best flavor profile and fruit properties.
